Co-owners Robin Molloy and Lee Brooks were approached with the idea of putting a brewery into the Imperial, a historical building in New Hamburg, built in 1872. It now consists of 12 luxury one-bedroom rental suites with the grandeur of the early 1900s.
Molloy and Brooks state their love for Ontario craft beer as one of the driving reasons behind why they created this boutique brewery. Additionally, having lived in Germany, they are channeling their love for German culture through creating German style beers – A sentiment that seems to resonate with the German history and heritage of Waterloo Region.
Bitte Schön means “you’re welcome” in German.
Bitte Schön is deeply rooted in the New Hamburg and Wilmot Township community, but you may recognize its co-owners from another popular craft beer brewing establishment – Descendants Beer & Beverage Co. Launched in 2014, Descendants offers great beer and a fantastic location that provides a twist on traditional European bierhalls.
